Our Story

A restaurant a century in the making, Rouser is reinvigorating one of Salt Lake City’s most iconic landmarks with a charcoal-fired menu - reminiscent of the coal-fueled engines that once connected people and places across the country.

Today, we’ve layered modern amenities alongside the original architectural structure of the 1909 historic Union Pacific Depot Train Station to make for a truly singular experience.

Our Philosophy

Reminiscent of the bustling train station it once was, where voyages began and connections were made, Rouser invites you on a journey of bold flavors and conviviality.

Slow down and savor each bite - a full-flavored, charcoal-cooked moment you’ll continue to savor long after the embers have faded. Here, you’ll reunite with friends, forge new business relationships, make new family memories. No matter whether you join us for breakfast, lunch, or dinner, just know that the possibility for exploration and new-found connections start now.

The Experience

With soaring ceilings and architectural touches that nod to its train station origins, Rouser comes alive with the warm glow of charcoal fires and the buzz of lively conversations. Here, the gentle hiss of searing meat and the aromatic waft of charcoal create an immersive dining experience that’ll engage all of your senses.

Whether you’re a history buff, a foodie, or simply in search of an unforgettable meal, we’ll whisk you away on a flavorful adventure that echoes the thrill of cross-country train journeys.
