From Spring to Flame: Rouser’s Rainbow Trout from Whistling Springs Farm

At Rouser, our culinary philosophy is rooted in sourcing sustainable, local ingredients whenever possible, that showcase both flavor and responsibility. One of the most exciting expressions of this commitment is our partnership with Whistling Springs Farm, a small, family-run trout farm located at the base of the Wellsville Mountains in Northern Utah. Their fresh, sustainably raised rainbow trout is unlike anything else in the Mountain West—and it’s now featured on our menu.

Why Sustainable Rainbow Trout?

We believe that knowing the origin of your food enhances the dining experience. That’s why we’ve partnered with Whistling Springs Farm, where trout are raised in pure 58-degree spring water with a system that’s as natural and clean as possible. This open, gravity-fed system requires no electricity or pumps, using only the natural flow of spring water to nourish the fish—just like it was done over a century ago.

These trout are:

Free from antibiotics
Raised without growth hormones
Never exposed to recycled water or microplastics
Grown in low-density, chemical-free environments

This is sustainable aquaculture done right. Whistling Springs isn’t just about raising fish—it’s about honoring the environment, preserving tradition, and producing some of the best-tasting trout in Utah.

How Our Rainbow Trout Is Prepared at Rouser

After discovering Whistling Springs through social media and tasting their product, our culinary knew immediately it was a match. Their trout is clean, vibrant, and mild—the perfect canvas for our culinary creativity.

Our preparation brings out the best in every bite. We rub the inside of the trout with a Vietnamese-style pesto, grill it to crispy-skinned perfection, and finish it with a bright tomato chow chow, delicate micro herbs, and a drizzle of yuzu oil. It’s bold, fresh, and deeply satisfying. This trout dish is a seasonal special, available 2–3 times per week depending on delivery availability.
