We’re especially proud to feature diver scallops from Sue Buxton in Stonington, Maine — a true leader in sustainable seafood. Since the 1990s, Sue has championed responsible harvesting and partnered with local fishermen to protect the waters she calls home. Her scallops are hand-harvested and prized for their clean, delicate flavor — a perfect match for the Josper’s smoky intensity.
